I like lentils. It’s not something that every person likes to eat, but I do. And I’ve been eating lentils a lot more these days. So, obviously, I want to find different ways of using them.
I saw a few days ago a recipe for lentil puff patties. I didn’t have every ingredient on the list so I thought of a way of doing them using what I had. And so I did.
The ingredients list is really simple:
– bacon cubes or small strips
– feta cheese
– sweet potatoes or sweet potato puree
– store bought puff pastry
So, you just need to prepare the lentils (cook them without salt until soft), the bacon (fry it and put it in paper towels to take away most of the fat), the sweet potato puree (cook the potatoes and then mash them together – I used my food processor) and the puff pastry (I don’t have cutters, so I used one of my wine glasses eheh). Then, you just stack the ingredients in this order: lentils, bacon, bits of feta cheese and top with a swirl of the sweet potato puree. Put in the oven for about 35 minutes, until the pastry get that golden look. =) I had some leftovers of pastry, so I made a giant one, as you can see in the picture below eheh 🙂
I have to say, I took these to the house of a friend where a group of us were watching the semi finals of the European Championship (Portugal lost 🙁 ) and some people liked them, others didn’t. I know they don’t look that yummy but I really like them. I think they turned out really good. But I do like lentils. So, I would tell you to try this recipe only if you really like lentils. If you don’t, don’t use this as a first way to try lentils. You probably won’t like it.
