The making of the Polka Dot Cake =) {or my yearly fun cake edition}

You might remember my post called The Making of the Rainbow Cake from last year. Well, this year I made the sequel ehehe It was for my friend’s birthday dinner, as last year, and what she gives me ideas of what she wants and I choose one. I chose the Polka Dot Cake and did my best to re-create it.

This was the photo she gave me:

polkadotcake1Β It seemed easy. The basic idea is that you first bake mini cupcakes or cake pops in cute colors and then add them to the pan with the main cake dough. Well… it’s not as easy as it seems. But right now I know some things that I should have done in a different way, so, hopefully that helps.

I used Duncan Hines Classic White cake mix because that’s the easiest simplest cake mix and I only had a couple of hours to do it {and it’s really close to one of my most-used recipes}. I also bought Duncan Hines frosting but I ended up using my Cream Cheese frosting recipe because I found the store bought ones to be too sweet {here’s the recipe for the frosting}.

I prepared the dough as directed in the box {added 1 cup water, 1/4 cup vegetable oil and three large egg whites to the powder mix}.

Separated a bit of dough to combine with each of the four food colors I wanted and put them in mini cupcake silicone molds. I made two batches – 24 total – and it took about one hour and below is how they looked. Cute right?

Left them to cool completely on a wire rack and then started to make the actual cake layers. And it’s as simple as the photo shows. And I know it shows a lot of different ways: each layer was put together in a different way. whoops! eheh

After every layer cooled completely, it was time to put the cake together. And this is what I used {didn’t use the frosting in the photo, ended up making from scratch}:

The wooden sticks were used to provide a bit of support and I put 7 all around the cake. And this is how it looked =)

And inside, it wasn’t as perfect as I wished it was, but I can tell ya it was really tasty! πŸ˜‰

So, here’s what I now know I should have done differently:

1. bake more mini cupcakes and put about double the amount on each layer. The amount I used wasn’t enough to show the polka dots as I wanted.

2. use less cake dough to fill the layer and specially, don’t cover the balls. This dough rises a lot and the amount I used overshadowed the polka dots.

3. take notice of the way you put the cake together. The way the layers are distributed will make the cake look more colorful and cute. There were slices with just blue dots, and others without dots!

I hope you enjoyed this post! And if you’re here to try and get info on how to make it, I hope my suggestions helped! =) I decorated the cake this way but you can decorate it or frost it in any way you prefer!

    I love it, I just made a kit kat one a few weeks back that I did polka dot cake inside. I love the cupcake idea, I used my cake pop pan to make mine. Thanks for the ideas!

    My granddaughter spent last night with us, and I showed her this post this morning. At 5 years old, she thinks your cake is the best…it combines three of her favorite things–m&ms, cake, and the wafer roll cookies that she calls “cigarette cookies.” And since she’s a girly girl, she loved that it had a bow. I will need to make it for her…it’s really unique and beautifully done.
