Today I’m back with a very simple but totally perfect recipe: Lime Mousse.
I love lime, the scent, the taste, the color, everything… and lime mousse is just perfection, specially on those warmer days. It’s indulging – not a light, cal-free recipe at all – but so worth it!
You can even make it, freeze it and it turns into a very awesome, tasty and refreshing homemade lime ice-cream.
This is what you’ll need:
1 can condensed milk (14oz / 400g) – 4 medium sized limes – 4oz / 200ml of cream – zester/grater – big bowl – whisk
And that’s really all you need. It’s that simple. I prefer using the regular condensed milk and not the light version, because the light one tends to have a lot more sugar. But I prefer using light cream instead of the full fat version. But that is your choice.
First of all, zest all the limes and then juice them. Reserve both.
Put the condensed milk and cream in the bowl and mix everything with the whisk. When everything is combined, add the lime juice and whisk. It will quickly thicken the cream and you’ll have your mousse thickness in just a few seconds. Don’t believe it? See for yourself:
This is how it looks:
Place the mousse in the serving bowl or bowls (or place it in the freezer for an amazing ice cream) and sprinkle the lime zest on top. Refrigerate it and serve cold.
