{Recipe} Chicken Salad (with pasta and veggies)

Right after college, while looking for a job in my field, I worked in a shopping mall. I didn’t have much time to have lunch or dinner, so I usually just ate a salad at a salad bar called Vitaminas (click here to see some samples of their salads).

Since then, 7 years ago {ouch!}, I’ve only had one of their salads maybe a half dozen times. Today I was craving one so I decided to make it at home. And it’s really easy too.

So, for one salad like this one,

You’ll need:
– Handful of romaine lettuce
– Handful of baby spinach
– 1 cup of cooked pasta – I prefer fusilli
– 1/3 cup of cooked corn
– 1/3 cup of cooked peas
– 6/7 cherry tomatoes
– about 1/2 cup of grilled chicken breast, cut into strips
– dressing of your choice – we use a salad “salsa light” from Linessa (only 18cals per tablespoon)

And there’s really no need for directions. Just assemble it using a big bowl or plate and you’re good to go! I didn’t have anything grilled or cooked and it only took me about 15 minutes since I started preparing lunch up to when we sat down to eat it. I love salads and this one is so satisfying, it’s amazing! =)

    I’ve never tried any salads that have pasta in them. They look really good but I’m afraid the texture of lettuce and pasta together will freak me out!
