{Recipe} Chanel Cake – Guest Post

Hi everyone! Today I’m excited to welcome Janine from Poupadinhos e com vales {translated would be something like “Frugal and with coupons”}. She’s a fellow Portuguese blogger and she went to school with my sister Cristina. For the past few months, her blog and Facebook page {where she has over 79k likes!!} have achieved lots of success, and – more importantly – have helped change the way we buy and save. Hi everyone! I’m here with one of my recipes. This recipe was something I came up with to use some products I had at home and quickly it became one of our favorite cakes! The name – Chanel Cake – came to life during a get together with friends. I told them the ingredients and having three C’s {coconut, carrots and cinnamon}, they immediately started calling it Coco Chanel Cake, trés chic :-)!



– 200g / 7oz of grated carrots
– 1/2 cup of vegetable oil
– 1/2 cup of milk
– 2 cups of sugar
– 2 cups of all-purpose flour
– cinnamon (about 1 tsp, but it’s definitely to taste)
– 60g / 2oz of desiccated coconut
– 1 tbs of baking powder
– 4 eggs



1. Mix the carrots, oil, milk, eggs and sugar until well combined.
2. With a fork, mix the flour, coconut, cinnamon and baking powder.
3. Pour in a tube pan and put it in the oven until it’s golden on top or a toothpick comes out clean.


This is a very inexpensive recipe and without adding the electricity and gas, it cost me about 1,80€ ($2.50). This is a big cake and it’s great to send as a snack with your kids to school, to eat at breakfast, with a meal as dessert, etc. and it yields a lot of servings!
