Yesterday I didn’t have much time to make an elaborate meal for lunch and I wanted to have fish. So, once again, it was time for an experiment. =)
If you’ve been following my blog, you now know that I love to mix different and sometimes unexpected things. And I use a lot of frozen things for convenience whenever in a rush. That’s what happened today.
I wanted fish so I took some fillets from the freezer. When I was doing that, I saw the bag of frozen corn and I love corn, so I took it out also. I put a thin layer of corn in the bottom of the oven dish and topped it with the fillets. Then I remembered that we had a lot of eggs, so I whisked 4 eggs with a pinch of salt and pepper. And just for the extra kick of protein (and because my boyfriend really likes it), I added a can of tuna. Poured the mix on top of the fillets and put it in the oven for about 30 minutes.
And, I have to say, it was delicious! Really! There wasn’t a lot of strong flavors from sauce or seasoning, so we could really taste the fish, the corn, the tuna and the eggs. And it was so easy! We ate it with a serving of lettuce with balsamic vinegar and that was a good healthy meal. =)
And it also looked good! Almost like it had cheese on top =) Cool!
I declare this experiment a success! Obviously – and as always – you can try this recipe with a lot of different combinations and seasonings. I probably will. Maybe next time I’ll go for more of a paprika or curry path. 😉
