Quick and Easy Leftover Omelet Dinner

A couple of days ago we were thinking about what to make for dinner but we didn’t want to spend a lot of time doing it so, we came up with this.

It’s just a simple leftover omelet. We don’t like to use any oil or butter if we don’t need to, so it really just came to this:

– Beat two or three eggs with just a pinch of salt. Add some spices. We added cayenne pepper, curry powder and oregano.
– Pour the egg mix on a non-stick pan (ours is a bit old, but still works perfectly).
– Add whatever leftovers you have in the fridge. We added a bit of ham and a slice of cheese on top.
– Cover with a pan lid. Let cook in low heat until you see the mix on top is fully cooked. I find that using a lid helps the omelet to cook through a lot faster and become fluffier. I do it all the time.

I know it’s not the best looking thing but I can assure you it’s really good. And it has a good amount of protein. I guess this could also serve as a good breakfast or brunch.

While this was cooking, we made a bit of the salad I’ve talked about and that was it! A nice quick dinner =) (And healthy!)
