This is the simplest recipe for coconut cookies I know. It’s quick, simple and easy and I do it from time to time when we’re craving coconut. It’s done in about 30 minutes – the whole recipe – and I’m sure you’ll love it.
All you need is (yes, it’s in metric):
– 250g of desiccated coconut
– 200g sugar
– 1 tablespoon of butter
– 3 eggs
Mix the coconut, sugar and eggs until evenly combined and then add the butter. Put the mix on a cupcake tin or in a cookie sheet and put in the oven (heated at a medium temperature). Be aware that in a cookie sheet, the mix will spread and they won’t turn out as round and high as the ones in my photos.
And there you go. It’s really easy and they taste so good! =)
