You may or may not remember what my first post was. We’re getting closer and closer to this website’s first birthday and I just remembered that my first post was about the person that introduced this recipe to me.
Leesha – or Xsparkage – posted this video on her vlog channel where she talked about a recipe she is now loving. A chicken fried “rice” recipe made with cauliflower. I’m not a big fan of cauliflower but she said that you couldn’t taste it so, I wanted to try it.
You can watch the video below to see how you do it, but it’s really simple and quick. The ingredients are (for the amount shown on the video):
– 1/2 head cauliflower
– 2 cloves garlic
– olive oil
– 1/4c soy sauce (or less)
– frozen peas
– 1 egg, beaten
The only thing I altered, because it was the first time, and I really didn’t know if we would like it or not, or if it would feel fulfilling or not, was that I used a bit more that the amount of cauliflower Leesha used on her video, 3 cloves of garlic and 2 eggs. The rest was the same and seriously, this is amazing! You do not taste the cauliflower at all! My bf even asked me if it really didn’t have rice in it. =) Thank you Leesha for sharing!
