I love lemon curd and two years ago I made it for the first time. I even made a YouTube video for my channel (I will be linking it below, but the sound is really loud for some reason, so please turn down the volume before watching – I’ll work on fixing that).

Lemon curd is really easy to make and you can make a really big batch, put in pretty jars and give as gifts. Perfect for Christmas baskets, right? {can’t believe I’m already thinking about Christmas gifts…}

When zesting the lemons, make sure you are very careful. A lot of people don’t pay as much attention as that task requires, and end up with bleeding fingers and nails… And we don’t want that.

Also, you should sterilize the jars where you’re keeping it. It will last longer without any risk of spoiling. There are A LOT of ways to do it, but my favorite and, in my opinion, the simplest way, only has three steps:
– wash the jars and lids thoroughly – they have to be perfectly clean;
– boil them in a pan filled with water for about 10 minutes;
– let them dry completely on top of a clean towel.

For the vacuum part, all you need to do is fill the jar up to the top with the hot jam, close the lid and quickly turn it upside down, letting it cool like that for at least 20 minutes. This is specially useful when you make lots and lots of jars, because the vacuum seal lets you store them for a longer time.

You can make this to use as a normal jam, with toasts, bread, cookies, scones {I do have a really great scone recipe, if you’re looking ;)} or to use as cake filling. I’ve done it with a blackberry cake and it turned out really great!

Homemade Lemon Curd Recipe
 
Easy recipe to make a delicious lemon curd. Double or triple for a big batch to give as gifts on a special occasion! Think Christmas!

  • 6 lemons
  • 6 eggs
  • 2⅓ cups of sugar
  • ½ cup butter
Instructions
  1. Zest all the lemons and then juice them.
  2. Add the sugar, lemon zest, lemon juice and butter to a saucepan.
  3. Gently mix them together on medium heat until combined.
  4. While the ingredients and heating up, beat the eggs in a bowl. Make sure to beat them well!
  5. Take the saucepan from the heat and add the eggs, stirring nonstop.
  6. Take it back to medium-low heat and let it boil, stirring gently.
  7. The lemon curd is ready when it coats the back of your spoon.
  8. Fill the jars immediately, put the lid on (make sure it's secure) and flip them over to create a vacuum seal while cooling down (optional).
