Happy Valentine’s Day!

Today is Valentine’s Day!

I really believe in what I wrote in the beginning of this day on my Facebook page:

“Use this day maybe as a big gestures day, mark it in some way… But don’t forget two things:
– valentine’s day is not only for men to give presents and plan good things – women should do it too
– show your love the rest of the year… it’s in the small things, really!”

So, with that in mind, I chose today to try to make the “Sweetheart Cupcakes” I saw on AllRecipes.com a few days ago. That recipe only said how you should make to get that triple colored effect so I looked for a good white cake recipe and found this “Heavenly White Cake” recipe. This is most used with cakes, even though you can use it with cupcakes, and so I did. Obviously, it didn’t have a frosting recipe so I used one of my favorite frosting recipe – the Cream Cheese Frosting. =) Confused? eheh hope not!

To make the cupcakes I followed the white cake recipe and when I had the batter ready, I followed the sweetheart recipe to make the triple colored effect. The only thing I changed was the raspberry oil. Didn’t use that, instead I used a strawberry liqueur. The cupcakes took 40 minutes to bake and the recipe yield 12 cupcakes plus a bit more (that I used to bake a cute small cake for our lunch dessert today – photo in the end of the post).

I don’t think it’s that hard to make the triple color effect. But I couldn’t find my pastry bag and I had to use a normal bag and it was a bit hard and messy to get the pink and red mix inside the white… But it looked good in the end so, I guess it was okay.

While the cupcakes were in the oven, I prepared the frosting. I’ts very simple and works every time.
Ingredients:
– 1/2 cup of butter (1 stick), room temperature
– 8 oz of Philly cream cheese (1 package), room temperature
– 1/2-1 cup of sifted powdered sugar

Cream the butter and cream cheese together, about 3 minutes. Slowly add the powdered sugar, taste as you go, adding more sugar until you have reached the desired sweetness. Usually I add about 3/4 cup.

I let the cupcakes cool during the night, put the frosting in the fridge and today I decorated them. =) The frosting is not really white but still I mixed a bit of red food coloring to some of it to try to make that pinkish effect on it. Again, I didn’t have my pastry bag so, no sparkly effects… but still, I think they look cute =) After the frosting, I sprinkled them with small white and pink hearts. =)
