Today I want to share a quick “recipe” with you.
I like fish, peas, onions, vinegar and red peppers. So, why not combine them?
You’ll need about two cups of frozen peas, 3 medium onions, 4 or 5 fish fillets, 1 red pepper, salt, 1/4 cup of red wine vinegar (or to taste), black pepper and olive oil.
The only thing that took a bit of time to prepare were the onions because I prepared them in the pan with (a lot of) red wine vinegar. I love the combination of onions and vinegar and, if you just need to let the onions cook a bit in the vinegar (about 10 minutes) to have that awesome taste. =)
After preparing the onions, all you need to do is layer all the ingredients in an oven-friendly dish. Start with frozen peas, drizzle with a bit of olive oil, then frozen fish fillets, a dash of pepper and salt, then the onions and then one sliced red pepper.
Put in the oven for about 30 minutes or until the fish looks cooked all the way through and the peppers have that pretty roasted color.
Serve with potatoes and voilá! You have a healthy, tasty meal! =)
