Hi everyone!

Last Tuesday, January 13th, was my mom’s birthday. Congratulations Mom!! =)

I’ve been baking her a cake for the past few years, and this year I wanted to make her something special – a black forest cake.

I had never done one before but it was something that my mom had been talking about and I decided to give it a go.

I followed Laura Vitale’s recipe, and Nigella Lawson’s “visual aid” photo when it was time to decorate. Click on the photos below to go to both websites.

I made a few mistakes and I had to improvise a bit, but it was delicious! The cake wasn’t the prettiest or neatest, but it.was.goooooood! The cake itself was moist, rich but not overly sweet {I cut the sugar to 2/3 of what was asked for} and the cherry filling and forest fruits toppings were on point. And it looked cute. Not beautiful, but cute. 😛

Here’s the deal. I left to the last possible minute to buy the ingredients I needed. The result was not finding exactly what I was looking for in terms of decoration. But hey, it did taste great. One thing I’d change – apart from buying everything I need in advance – was the syrup. A chocolate cake this rich needs a bit more brandy or rum to balance everything. But it was the first time was I doing it and I was a afraid of going overboard.

I will be making this again. On a special occasion, for sure. This is NOT your regular I-need-something-sweet cake. It’s very indulging. The kind of once-or-twice-a-year indulging. =)
