Today I want to share a really easy way to season a chicken for a really good roasted chicken. =)
We don’t eat the skin in my house so whenever I can I don’t even cook it with the skin on. So this chicken on the photos is naked. Sorry for that =)
What you basically need to do is, after having the chicken prepared, grab a small bowl and mix all these ingredients:
– juice of 1 lemon;
– juice of 1 orange;
– 1 tablespoon of garlic powder;
– 1 teaspoon of curry powder;
– 1 tablespoon of salt;
– 3/4 teaspoon of black pepper;
– 2 tablespoons of honey.
Everything, obviously, can be adjusted to your taste. Whenever you’re mixing any kind of seasoning, you should taste it to make sure it has enough spices or salt.
Place the chicken on a pyrex dish and just pour the mix on top of it. Make sure every single part of the chicken was covered. Grab aluminum foil and cover the whole dish, trying to leave it as tight on the edges as possible. Put in the oven at around 205 C (400 F) for about 50 minutes. After this, take the foil and leave for about 10 minutes more, just to add that golden brown color.
It should be perfectly roasted. Mine, and I’ve done it a lot of times with different seasonings, is usually at the point where the meat and bones just separate and that is how you see it’s done. At least in my book. =) I assure you it tastes really good and it’s healthier without the skin but obviously; but if you do eat the skin, go for it – I’m sure it will be delicious! 😉
