Today I want to share a quick way to make baked potatoes. I saw this photo of a baked potato a few weeks ago and I wanted to try it but I couldn’t find it again, so I just went with what I remembered from it – basically, that it was a half-way sliced potato. =)
It’s so simple to prepare! After washing the potato, you can cut a slice on the bottom, so it will stand as the ones I have in the photos. Then, slice until about half-way, being careful not to have too thin slices, as they will drop off the potato as it bakes. As I always say, you can season the potato to your taste, but we used olive oil, balsamic vinegar, sea salt, cayenne pepper, oregano and curry powder.
Put in the oven (230 C / 450 F) for about 40 minutes or until they have that beautiful golden brown color. I actually recommend you to drizzle a bit more of olive oil, vinegar and salt at about half the cooking time, so the seasoning really goes inside the potato. But even if you don’t do this, the potato skin will be so tasty that I’m sure you’ll like it.
Also, we had this as a side dish to simple grilled fish to make it a light, healthy meal, but I think this is also great with any other kind of fish or meat.
