Corn Muffins – Betty Crocker Mix

I tried this Cornbread & Muffin Mix when I went to visit my sister and brother in law for the first time, back in 2009. I loved it and since then I had it two or three more times.

When the Liberty American Store opened here in Lisbon, I was able to buy one of these mixes and yesterday I made corn muffins.

I wanted to post this here because, even though it’s something so simple – and common, specially to those of you that live in the states – it’s a really good snack. I mean, it takes literally 5 minutes to prepare, 16-18 to bake, and then you have 6 or more tasty muffins. How cool is that?

As you can see on the label on the left, each pouch has 6 servings. I don’t like them that big, so I made 12. So, for each of the muffins I made, I get about 80 calories. It’s not that bad for a muffin like this. So, the main idea here is that, even though it’s a mix, it’s not the worst choice out there. Obviously, I don’t recommend that you eat all the muffins at once. =) But for a small snack, it’s awesome. And I even had one for dinner yesterday, with just a bit of garbanzo bean salad.

The package suggested different toppings for the muffins, so I tried adding a bit of cheese on top of 4 of them. And it’s a nice combo. I like how it tastes. But I think I prefer them simple.

Overall, I like it and I think it’s a nice quick food choice. Just not for everyday.
