Last week I made a really good turkey leftovers lasagna. Today we had a bit of cod left in our freezer and I tried to make a cod lasagna. =) It went really well so I wanted to share with all of you.
So, this is what you need:
– about 1 1/2 cups of shredded cod (cooked)
– 3 cups of frozen spinach (or about the same amount of fresh spinach)
– 2 cups of double cream
– shredded cheese, about 1/2 cup, to top the lasagna
– lasagna noodles (preferably no-boil)
– vegetable oil spray
While you’re cooking the cod (in plain water, without salt), sautée the spinach in a little drizzle of olive oil, seasoned with salt and pepper. Pour the double cream on a bowl. When the spinach is done, add it to the cream and mix it all together.
Around this time, the cod is probably cooked through. To ease the shredding part, immerse the cod in cold water. Then, shred the cod to bite size pieces (photo above, next to the ingredient list).
Then what you need to do is put the lasagna together. Start by spraying an oven friendly dish with the vegetable oil and build two layers with pasta/cod/spinach. The last layer should be only made with pasta and the shredded cheese.
Put the lasagna in the oven for about 30 minutes, until the top is golden brown. Mine could have used a bit more in the oven, but we were more than ready to eat and couldn’t wait much longer =)
This recipe yields 4 good sized portions.
And there you have it! It turned out really good, we actually really liked the combination of flavors. =)
